Home-made tagliolini with courgettes, scampi and rocket-flavoured ricotta cheese

Lightly fry the chopped garlic and shallot in a pan. Add the scampi, the cherry tomatoes and the courgettes cut into rounds.

Add 1/2 glass of white wine. Add the mashed ricotta cheese to the mixture and season with salt.

Bring a saucepan of water, add salt then the pasta and rocket.

When cooked, drain pasta and rocket and pour into pan.

Add a handful of grated Parmesan cheese, some freshly ground pepper and salt to taste.

  • 600 g fresh tagliolini
  • 400 g shelled scampi
  • 4 baby courgettes
  • 4 cherry tomatoes
  • 50 g smoked ricotta cheese
  • 1 bunch of rocket
  • shallots
  • 1 clove of garlic
