Oven-baked Brill

Wash, clean and dredge brill with flour.

Place in a generously buttered ovenproof dish and season with salt and fish stock.

Add cherry tomatoes and unpitted black olives.

Put in pre-heated oven and bake for about 25 minutes at 180°.

Once cooked, the brill should be cleaned, boned and served in its cooking juices.
