Crab in "scorso suo"

Bring a saucepan of water acidulated with lemon and vinegar to the boil, immerse the crabs and wait until the water comes back to the boil: after 10 minutes, take out the crabs and drain them well.

Remove each crab from its shell, leave them to cool, then divide the crab bodies into half and cut them obliquely.

Using the appropriate utensil, remove the “pulp”, even from the crab’s nippers.

Turn the shell upside down, so it acts as a dish. Serve the previously obtained pulp inside the shell and dress it lightly with a dash of extra-virgin olive oil and lemon juice.
