John Dory with seasonal vegetables

Preparation time: 30 minutes.
Clean the vegetables and cut into matchsticks. Sauté with garlic-flavoured extra-virgin olive oil, season with salt and pepper (if required add a little stock).

Dredge the John Dory fillets with flour after pounding gently. Season with salt and pepper.

Fry the fillets until golden brown with garlic-flavoured extra-virgin olive oil, add a little white wine and a few drops of Worcestershire sauce. Add a little fish stock and cook for 3-4 minutes.

Put the fish fillets into the serving dish with the sauce and arrange the vegetables on top, sprinkling with the chopped parsley.

Garnish with other seasonal vegetables (asparagus, Malamocco baby artichokes, etc).
